    Sofritas is a meal prepared with diced (or scrambled) firm tofu simmered in an adobo sauce sauce made with onion, bell pepper, tomato, garlic, and chipotle peppers.

    Sofritas is derived from the Spanish word “sofrito,” which means “gently fried”. It refers to a chunky sauce prepared with onions, peppers, tomato, and garlic that is often used as a basis for stews.

    To make the Tofu Sofritas Recipe, the ingredients which are required in this Tofu Sofritas Recipe are the following which are shown below: 

    • ½ white onion, sliced into four wedges
    • 2 half red bell peppers, stalks and seeds removed
    • 1 green bell pepper, cut in half lengthwise and seeded
    • 1 roma tomato, cut in half lengthwise
    • 1 jalapeo pepper, whole
    • 4 unpeeled garlic cloves
    • 2 blocks (14 oz.) wiped dry and ripped into big pieces of extra-firm tofu
    • 1 tablespoon adobo sauce from a can of chipotles in adobo plus 2 chipotle peppers
    • 1 teaspoon tomato paste
    • 1½ teaspoon chili powder
    • 1½ teaspoon cumin powder
    • 1 teaspoon sea salt, with a little more for sprinkling
    • 2 tbsp avocado oil, plus extra for drizzling
    • ¼ cup of water

    Instructions

    1. Preheat the oven to 450 degrees Fahrenheit and prepare two baking pans with parchment paper.
    2. On one of the baking sheets, arrange the onion wedges, red and green bell peppers, tomatoes, and jalapeo. Drizzle with avocado oil and season with salt to taste. Place the tomatoes cut side up and the peppers cut side down in a baking dish. Wrap the garlic cloves in foil and set them on a baking sheet with a sprinkle of avocado oil. Roast for 20 to 30 minutes, or until the peppers and onions are browned and the tomatoes are tender (the peppers will be done first).
    3. Drizzle the tofu with avocado oil and season with salt on the second baking sheet. Apply in a thin coating. Bake for 30 to 35 minutes, or until the edges are golden and firm.
    4. Peel the garlic cloves and remove the stems from the jalapeo. Combine them with the onion, red and green bell peppers, tomatoes, chipotles, adobo sauce, tomato paste, chili powder, cumin, and salt in a food processor. Pulse until the sauce is thick and somewhat lumpy.
    5. In a large pan over medium heat, heat the avocado oil. Stir in the sauce and tofu to mix. Cook, stirring constantly, for 7 to 10 minutes, or until the sauce thickens. Season with salt and pepper to taste.
    6. Serve in a burrito bowl.
